Gave this a try for searing chicken thighs and the smoke point held up way better than my regular EVOO. The mid-harvest Picual really does make a difference—no bitter taste even after a few minutes on high heat.

I was skeptical about using EVOO for frying, but this one holds up beautifully—no smoke or bitterness even at medium-high heat. The Picual olives make it genuinely stable.

Finally, an extra-virgin olive oil that doesn't smoke up the kitchen when I'm searing chicken. The flavor is noticeably milder than my usual finishing oil, but it holds up beautifully in the pan.
